Today I’ve created another What I Eat In A Day video because so many of you seemed to enjoy my last one. I’m not a nutritionist but I have some regular go to recipes that I enjoy making and I also enjoy eating LOL 🙂

Slow-Cooked Vege Curry

Ingredients
1 medium orange kumara, peeled + chopped
1 large broccoli crown, cut into florets
½ white onion, diced
1 can chickpeas, drained and rinsed
1 can diced tomatoes
6. 1 can coconut milk (either full fat or lite)
¼ cup quinoa
2 garlic cloves, minced
1 Tbs freshly grated ginger
1 Tbs freshly grated turmeric (or 1 teaspoon ground)
1 tsp soy or tamari
½ – 1 teaspoon chili flakes
1 cup Almond Milk
Red cabbage and sesame seeds to garnish

Instructions
1. Add all ingredients to a slow cooker. Stir until everything is fully incorporated.
2. Turn the slow cooker to high and cook for 3 – 4 hours until sweet potato cooks through and the curry has thickened.

Mixed Berry Slice

1 ½ cups flour
1 ½ cups oats
¼ cup brown sugar
¼ tsp salt
½ cup coconut oil (melted)
¼ cup maple syrup
1 tsp vanilla
2 cups mixed berries
1 Tbsp brown sugar1 tsp corn starch

Preheat oven to 180 Celcius or 350 F.
In a mixing bowl, mix the oats, flour, brown sugar, salt and cinnamon until combined.
Add melted coconut oil, maple syrup and vanilla and stir to combine.
Set aside ½ cup of this mixture. Firmly press the rest of the mixture into a lined baking tray.
Add mixed berries on top and sprinkle with corn starch, and brown sugar.
Add the reserved crumble mixture on top. Press down lightly.
Bake in a pre-heated oven for 35 mins.

Overnight Oats
½ cup oats
1 Tbs chia seeds
½ tsp vanilla extract
½ banana (mashed)
1 tsp maple syrup
Almond milk
